Scientists from Osaka University in Japan have 3D printed the structure of wagyu beef. It is known to be the most expensive in the world as it contains a large amount of intramuscular fat. It is noted that the texture of the meat is recreated as accurately as possible. As developer Kang Dong Hee said, in order to achieve this amazing result, the histological structure of beef was used as a mock-up. After that, a 3D printing method was developed. It made it possible to reproduce complex structures with specified characteristics – muscle fibers, fat, and even blood vessels.

From animal stem cells, the researchers obtained mature cells of the desired types. They were used as the “ink” for a 3D bioprinter to print the vessels, muscle and fat fibers that formed the finished structure. The result is a small “steak” that closely resembles the look and texture of natural meat.

The researchers are confident that by improving this technology, it will be possible not only to reproduce the complex structure of meat, but also to make subtle adjustments to the fat and muscle components. So consumers will have the opportunity in the future to order meat for themselves based on taste and dietary preferences.

The specialist assured that it is meat, not vegetables, that is one of the key sources of vitamins, iron and other important trace elements.
