Monkus Wine Specialist: Sparkling wine suits most dishes

The expert of the wine trading company Fort Christina Monkus, in an interview with RIA Novosti, revealed to the Russians the rules for selecting drinks for New Year's meals. Sparkling wine is fine for most of them, she said.

“And the point here is not in the festive image, but in the acidity inherent in most sparkling wines with a small residual sugar content, which suits completely different dishes: from salads to turkey,” the specialist noted.

According to Monkus, the more guests gather at the table, the more versatile the drink should be. For example, you can choose a classic brut or “extra dry” – dry sparkling wine with a sugar content slightly higher than in brut.

The expert explained that certain types of wine should be chosen for some dishes. So, for the historical version of Olivier with crayfish tails, “zero dosage” from Champagne will suit. If the salad is prepared with sausage, then you can give preference to “asti secco” – a dry aromatic sample from the same grape variety as the traditional sweet asti. Similar recommendations can be applied to herring under a fur coat.

Jellied fish should be served with Gavi di Gavi or Gruner Veltliner, and red and black caviar is combined with classic trousers, added Moncus. Chardonnay from New World can be served with hot dishes on the table, sauvignon blanc from New Zealand or chenin blanc from South Africa can be used with fish. Aromatic full-bodied wines, for example, Chilean carmenere, are recommended for steaks.
For fast food – for example, chips, burgers, snacks, the specialist recommended purchasing several bottles of basic prosecco.

Earlier, the gastroenterologist of the multidisciplinary clinic “Aloderm” Yulia Machneva revealed ways to avoid unpleasant consequences after the New Year's feast. According to her, rash eating can even lead to hospitalization, so you should follow simple rules and develop “nutritional tactics.”
