The Finnish city of Lahti, which received the title of the Green Capital of Europe this year, decided to justify its status and brewed beer on goose droppings, Food and Wine writes.

In Europe, every year they choose a city where a project in the field of ecology was created and successfully implemented. The award has been issued since 2010. The first winner was announced to be Stockholm, the penultimate – Lisbon. This time Lahti was chosen for the creation of a circular economy. Now 97% of waste is recycled or reused in the city.

The Lahti City Hall, flattered by the praise, turned to a local brewery to brew an eco-themed drink. This is how the Wasted Potential series of imperial stout was born.

The employees of the brewery walked through the parks and collected waste: droppings, plants and lichens. The idea was successful from all sides: both natural ingredients were found, and order was put in public areas. With the collected droppings, the brewers smoked malt, which gave the drink a “unique flavor.”

Beer with goose droppings will start selling at the end of August. During this time, it is planned to release varieties with herbs and lichen.

Prior to this, MIR 24 said that in Canada, beer was made from waste water.
